In need for some quick and easy vegetarian recipes?

Well look no further because I’ve compiled some of the most popular vegetarian meal options to help you on your quest to eat healthy.

All of these recipes take almost no time to make and can all be completed in 15 minutes or less.

Whether you’re looking for the occasional break in your diet or need some options to help you when you’re on the go, there are plenty of options for you to choose from.

I created this post to serve as an excellent resource for those who have busy schedules and/or need to meal prep for those hectic days ahead.

If you’re pressed for time or just in need for some inspiration for a quick meal then click here to jump right to the list.

If you’re still reading then good. I wanted to do something a little bit different with this post.

I’m hoping it can serve more than its presumed intended purpose.

What is that purpose for you?

It’s really simple – To get you thinking about what you eat.

Personally my work schedule eventually led me to the realization that I had to make healthy food decisions.

It’s easier for me to be mindful of what I eat on my days off but on work days I’d just pick up the first thing I came across because I was in a hurry.

I wanted to change that and for me that meant including some vegetarian options.

However I didn’t want to do it just because everyone else was doing it or just because it sounded healthy.

I had to understand WHY I was doing it.

When you see a post about “XX number of quick and easy vegetarian recipes”, it’s easy to jump on it, glance through, pick a couple of recipes and you’re gone.

There’s really nothing wrong with that because at the end of the day that’s what the post serves.

But if you’re on a quest to eat healthier I want you to ask yourself why you’re doing it.

Why does any of it matter?

If you already have your answers then by all means please move on to the list.

However if you don’t have them yet I encourage you to give it some thought.

Let me ask you this question “Is a vegetarian diet healthy just because it is vegetarian?”

Just some food for thought.

I won’t dive into much detail here but if you’re new to the vegetarian diet or just need a refresher about some of its benefits I recommend you read the post below.
